I grew up going to Rosita’s in DeKalb, Illinois. They have a dish, the Enchilada Stack, that was my favorite (still is).
Recently, I recreated it and my husband says, “ooh Mexican Pizza Night, like at Taco Bell.”
Don’t get me wrong, I ‘run for the boarder‘ just like any other person who needs a quick taco fix. And their Mexican Pizza is good … but this is a masterpiece.
Recipe Process:
- 2 tortillas per person
- Heat Flameware Pizza Stone in oven at 500F (this could be done on a grill too), pull out and build stack:
- tortilla
- beans/meat
- salsa
- cheese
- tortilla
- salsa
- cheese
- Place back in oven under broiler until everything is heated through and the cheese is melted.
- Top with your favorite ingredients we used lettuce, hot sauce, sour cream, and (a must around here) guacamole.
- Important Note: the Pizza Stone should not be used on the stovetop (even though it is shown here, it’s just there cooling after being in the oven).
