Here at the Clay Coyote we love New York Shuk. We carry NYS Preserved Lemon Paste, Harissa and Ras El Hanout. New York Shuk’s Preserved Lemon Paste has been described in Forbes magazine as, “an ingredient she never knew she always needed.” and I second that opinion.
Shuk’s Preserved Lemon Paste may seem intimidating to use, or so far out of the norm you might not know where to start with it. Luckily Forbes, The New York Times and The Strategist all love NYS lemon paste as much as we do, and offer a few tips for using it. The preserved lemon paste lends itself to both sweet and savory applications. The bright citrus helps cut through rich savory flavors, and it adds that special something to sweeter foods.
In The Strategist, author Lauren Joseph lists all the ways she likes to use it. I want to try out her suggestion of putting a spoonful into a drink shaker with ice then adding sparkling water to make a lemonade spritzer. She also suggests adding a spoonful with some herbs (cilantro, basil, mint) into a glass and adding a shot of gin.
All of those different uses being said, it is still a wonderful addition to Chicken with Olives, Preserved Lemons and Thyme, one of the Coyotes absolute favorite recipes. We love it so much we send the recipe in the box with our online Tagine orders!
