Marinated cucumber, Onion and Tomato Salad is a perfect summer dish. It doesn’t require heating up your oven and it’s the time of year when people find themselves with a lot of cucumbers and tomatoes.
This recipe is from allrecipes.com and is as simple as it sounds.
Ingredients:
1/2 cup white vinegar
1/4 cup vegetable oil
1 cup water
1/4 cup sugar
Salt to taste
Freshly ground black pepper to taste
3 cucumbers, peeled and cut into 1/4 inch thick pieces
3 tomatoes, cut into wedges
1 onion sliced into rings (the recipe calls for whatever kind of onion you like)
Directions:
Step 1: Whisk together the vinegar, oil, water, sugar, salt and pepper until well mixed.
Step 2: Add in your cut up cucumbers, tomatoes and onion and mix until well coated.
Step 3: Cover the salad with plastic wrap and refrigerate for at least 2 hours.
Step 4: Enjoy!
